Flavor Forecast 23rd Edition Recap

November 2023 | MCCORMICK CULINARY & INSIGHTS

As we wrap up 2023, let’s look back at this year’s featured trends and some of our favorite flavors and inspirational recipes. The Flavor Forecast 23rd Edition welcomed the comeback of full fats (Full Flavored Fats), French cuisine outside of the exclusive fine dining experience (Everyday French), and the multi-sensorial offerings of heat and flavor (Beyond Heat).

SAVORY BUTTERMILK RANCH ICE CREAM

Featured within Full Flavored Fats, this flavorful sweet and savory mash-up is a must try for any fan of ranch. When the cold ice cream is placed on top of the hot fried chicken, it begins to slowly melt delivering a mouthwatering creaminess.

Who knew the profile of traditional ranch seasoning (garlic, dill, onion, and buttermilk by the way) could work so well in a dessert and brunch? Draw inspiration and take ranch to applications beyond salty snacks and salad dressing, like proteins, sweets, and more.

CARAMELIZED APPLE & HAM CROQUE MONSIEUR

French cooking is emerging with inventive twists and fusions and becoming approachable (Everyday French). Some of today’s most-loved foods rely heavily on French technique. Case in point? This sweet and savory version of the Croque Monsieur – a French sandwich trending on restaurant menus. Featuring a rich and creamy béchamel, tart apple filling, salty ham, and melty Gruyere cheese, all sandwiched between two toasty slices of bread, this sandwich will change the brunch game forever.

French doesn’t need to be complicated. Showcase foundational French techniques and profiles in your applications, like Béchamel, Mirepoix (it’s just carrots, celery, and onions) and an Herbs de Provence blend.

SANSHO PEPPER YAKITORI WITH SPICY FURIKAKE

As heat becomes a celebrated journey in flavor complexed (Beyond Heat), this chicken skewer dish showcases how ingredient pairings come together to shape how heat is perceived. Related to the Szechuan pepper, Japanese Sancho peppers also have a hot flavor and tingling sensation. A miso glaze and a slightly crunchy furikake seasoning deliver umami and sweet with the heat.

Deliver beyond heat profiles to your applications like heat plus sweet, sour, salty, and more.

Look forward to the release of the upcoming Flavor Forecast 24th Edition!
