To create the puckering sour, briny flavors that are consistent with a dill pickle, I first sought to capture the perfect balance of vinegar, dill, garlic, and spices to deliver on the pickle notes. I capitalized on McCormick’s various flavor technologies to do so. Once I had the solid pickle experience, I began to experiment with varying degrees of heat, primarily from capsicum. I included both ground red pepper and capsicum flavor to get just the right amount of spicy kick. This all resulted in a fun-for-the-family snack that delights both dill pickle and spicy fans alike!
What’s the experience like? Aromas will include dill and vinegar, which immediately elicit a mouth-watering response. You’ll then taste upfront notes of sour, vinegar, salty, dill, followed by capsicum heat, garlic, and herb notes in the finish with a mild to medium heat lingering in the aftertaste.
