Being Mexican American myself, I grew up eating every kind of taco in the book. One of my favorites? Tacos al pastor. There’s nothing like that mouthwatering, thinly sliced marinated pork hot off the spit and piled into a fresh corn tortilla with onions, cilantro, and pineapple. If I could package that craveable Mexican taco flavor up for use in applications outside of tacos I would … and well, I did!
To create this base at Brand Aromatics, I utilized our large library of dried chile peppers and spices. We strive to use pantry-friendly ingredients and keep most of our products “clean label.” The challenge with al pastor is that recipes can vary depending on the region of Mexico. Sourcing the ingredients can be a task within itself. What we ended up with was a one-stop-shop solution that I feel best represents the authentic al pastor flavor profile. At first taste, you’ll experience the complexity of the chili peppers - smoky and just a touch of heat. Then, you’re hit with spices like cumin and oregano, followed by subtle nuances of achiote and onion and some sweetness coming from pineapple.
How to use this al pastor flavor base? The obvious answer is tacos! But to only apply it to tacos would be doing this base a disservice. Its versatility lends itself to marinades, sauces, soups and broths… the list goes on and on.
I’d highly recommend this base for transforming plant-based proteins, too.
