The Fresh, Authentic Flavors of Za’atar

September 2019 | Wayne, Master Flavorist

Nothing represents the unmistakable flavor of Middle Eastern cuisine quite like za’atar, an herb & spice blend made of thyme, oregano, sumac and sesame seeds that is often used as a condiment paired with pita bread and olive oil.

So I got to work bringing this traditional flavor to life to help tastemakers add a touch of the Middle East to dips, salsas, hummus, salad dressings, marinades, snack mix seasonings, crackers, chips and so much more.

For uniform color, consistent flavor and none of the bitter taste that often accompanies green herbs, I developed a za’atar-inspired flavor that features a winning mix of spices and sesame seed flavor, plus a sour astringency to simulate traditional sumac powder. So flavorful and versatile, one taste in virtually any application and you’ll be instantly transported to the Middle East.

To put it to the test, I tried it in a Green Goddess Dressing and it couldn’t have been more delicious. Bright green, herb flavors with notes of cucumber and lemon in a yogurt base. Unreal! Now it’s your turn see what you can do with this spot-on za’atar flavor.
